Ingredients
Beetroot - 250 gms Pepper (milagu) - 1 spoon Red chillie – 1 Oil - 2 spoons Moong dhal (payatham paruppu) Urad dhal (split) - 2 spoons Jeera - 1/4 spoon Mustard - 1/2 spoon Grated coconut - 1/2 cup Salt to taste
Method
Wash and peel the skin of the beetroot. Cut it small pieces. Cook it along with moong dhal in a cooker.
In a pan, heat oil and sauté pepper, red chillie and urad dhal till they turn golden brown. Grind it coarsely in a mixer along with grated coconut and jeera.
In a thick-bottomed vessel, put the cooked beetroot and add salt and the ground mixture and allow it to mix for about 10 minutes on low flame. Keep stirring with a ladle till it becomes thick like a gravy.
Add spluttered mustard to it. Garnish it with curry leaves. Sweet and spicy beetroot kootu can be a good substitute for sambar.
