Brinjal thayir pachadi

Ingredients

Brinjal (big ) – 1
Red chillies – 2
Green chillies – 1
Asafoetida powder - 1/2 spoon
Mustard - 1/2 spoon
Grated coconut - 1/2 cup
Curd - 1 big cup
Oil - 2 spoons
Salt to taste

Method

Wash and cook the brinjal in a cooker. Peel the skin and mash it. Grind grated coconut, salt, green chillie, asafoetida powder in a mixer and mix it with the mashed brinjal. Saute mustard, red chillies and mix it well with brinjal. Add curd to it and serve it with rice. This delicious pachadi is popular in the Chengalpattu district of Tamil Nadu.
